I started off with a basic chocolate sponge recipe; 7oz self-raising flour, 8oz soft butter, 8oz caster sugar, 1oz coco powder and 4 eggs. Starting by creaming the butter and caster sugar together, sieving in the flour and coco, adding in the eggs - mixing together to create a smooth cake mixture. The splitting the mixture into two round cake tins, placing them in the oven on the same shelf to ensure an even bake - for 20-25 minutes on 180 degrees.
Top Tip
To know if the cakes are cooked all the way through poke a cocktail stick or a skewer into the centre. If it comes out clean that you know it is cooked all the way through - if not, pop it back in for a few more minutes.
For the filling and to hold the decorations on I used again just a basic recipe for chocolate buttercream; 8oz soft butter, 12oz icing sugar, 4oz coco powder and 6-8tbs milk. This was enough mix to fill the middle of the cake, round the edges and the top.
I then decorated the outside of the cake with cadbury fingers, and the top with maltesers and minstrels. To then finish it off I added blue and 21st ribbon around the edge.
Quite chuffed with the outcome if i'm honest! - even if I do say so myself :)
Hope you like it. Do you do enjoy baking? What would you have done for a 21st birthday cake? ❤️
